German Potato Salad Used at Octoberfest

Ingredients:
- 10 lbs Maine or yellow potatoes
- 1 cup oil
- 1 cup brown vinegar
- 1 ½ cups beef broth
- 1 large oniojn, finely chopped
- 1 TBSP Salt
- ½ TSP peppoer
- 1 TBSP Sugar
- 1 TBSP Prepared Mustard
- 2 TBSP chopped Parsley
- 1/4 cup crumbled bacon
Directions:
- Cook potatoes in salt water for 20-25 minutes.
- Combine oil, vinegar, broth, onion, salt, pepper, sugar and mustard.
- Drain and peel, quarter ad slice.
- Pour oil mixture over potatoes while potatoes are hot..
- Toss.
